Lizzie’s Leftover Turkey Recipe

Us Yorkshire folk don’t like to waste owt! And that includes Christmas dinner leftovers. We all know the Christmas feeling of grazing on the nibbles (and chocolate) throughout the day and then when it gets to the big Christmas dinner you’ve spent hours on you’re so full! That’s why I created my leftover turkey pie to use up the abundance of food in the house. Plus it’s a great one to just chuck in the oven for that weird period of time between Christmas and New Year (does anyone know what day it is?!).

Now you know I don’t like to gatekeep my tips and tricks, so here’s my recipe for you to try over Christmas. 

Ingredients

  • All the left over turkey (or other roast meat you have from Xmas)
  • Can of Campbell's condensed cream of chicken soup  
  • Then fill the soup can with white wine (if you have any left)
  • Large tablespoon of mayo
  • Dessert spoon of French mustard (ooh la la)
  • Small tub of single cream
  • An onion (red or white, I’m not fussy… - about onions anyways)
  • Mushrooms (if you have some)
  • Butter or oil, for frying
  • Tin of sweetcorn (not essential but makes me feel a tad healthier over the Christmas period)
  • Zest & juice of a lemon
  • Potatoes (the leftover mash does the trick)
  • Cheese (ideally cheddar but add whatever you like or have left)
  • Green veg
  • Salt & pepper

Method

First things first, get all your ingredients out, pour yourself a big glass of wine (making sure you save enough for the recipe), put on some music, and grab an apron (I’m too messy to trust myself without one).

Fry off the onion, and any mushrooms you have, either in butter or oil.

Add the frying pan contents to an ovenproof dish, along with the leftover turkey.

Pour the Campbell’s chicken soup, white wine, cream, and sweetcorn over the turkey. Dollop (good word) the mayo and mustard into the dish too. Zest that lemon and give it a big squeeze over the mixture. Give it a good mix up and season with salt and pepper to taste (I feel like a proper food blogger saying that)!

Then cover with mashed potatoes and as much cheese as you like (the more the better for me). 

Pop into the oven until nice and golden on top. 

Once done, plate up along with some green veg (any and all will do), and enjoy with whoever will still sit around the dinner table with you!
